POSITION SUMMARY: This is a seasonal position from May to Oct.  The lead baker coordinates and/or supervises daily production of specialty baked goods; participate in costing and ordering related to bakery items/products/menu; responsible for portion and inventory control; produce pastry/desserts for Paradise Inn dining room within budgetary guidelines as directed. NATURE AND SOURCE OF SUPERVISION: Receives working direction from hotel chef; trains and directs support bakery staff.

Duties:

DUTIES AND RESPONSIBILITIES: *writes weekly schedule for bakery department with Chef *prepares base ingredients for daily production of bakery items *sets professional standards for consistency and excellence of production *designs and implement daily breakfast buffet pastry production under the direction of the chef *designs, implements and maintains Sunday brunch dessert station under the direction of the chef *completes, or oversees completion of daily production *produces desserts for employee dining room as directed *adheres to company standards and policies *maintains a safe and sanitary work environment *maximize profitability within food cost guidelines *other such duties as assigned

Qualifications:

PREREQUISITES: Education: College and/or trade school degree preferred. PROFESSIONAL REQUIREMENTS: 2 years kitchen experience to include professional baking/pastry preparation and execution; Garde Manger training preferred; comprehend metric measurements; able to compensate for altitude variances. Current Washington State ServSafe certification or food handler's card required.  PERSONAL QUALITIES AND PHYSICAL REQUIREMENTS: Must be able to read and communicate directions/instructions; service, safety and sanitation oriented; sense of humor, common sense, timeliness and urgency; ability to adapt to isolated life style in this national park environment; be task oriented. Physical: Will be required to perform diverse physical tasks; must be able to stoop, bend, kneel, grasp, handle, reach and perform repetitive motions; extensive standing, walking, stair climbing; good physical energy, stamina and agility; exposure to wet floors and hot temperatures occurs; must be able to lift up to 50 pounds. Appearance in compliance with company regulations;  must provide company approved slip resistant shoes.
